Although Janson claims this course in chemistry for the nonchemist is for "the homebrewer whether beginner or expert," it likely will be of most help to the intermediate or advanced home-brewer eager to fine-tune and standardize output. Janson tries to keep the hard science to a minimum and explains terms and processes fully and clearly. Still, he charts a lot of molecular structures, but his explanations are so comprehensive and his perception of common home-brewing problems so canny that the technical material won't drive readers away. The chapter on avoiding "off" flavors alone is worth the price of the book, and the chapter on evaluating beer and the insightful glossary just make it better. So if you are concerned about flocculation and avoiding that "baby diaper" or "skunky" taste and aroma, make this required reading. Mike Tribby

A good "basics" book

If you have a degree in chemistry, microbiology, or biology, this book is not for you. Buy George Fix's book or one of the texts by the Siebel Institute. This book is also not for the all-grain veteran looking for insight on the mysteries of recipe formulation and yeast interaction. Finally, Brew Chem 101 is certainly not for the professional brewer. This book is best for beginning - intermediate homebrewers looking to move from extract brewing to partial mash or all grain brewing.

I found this book to be an excellent introduction to brewing science for people long out of high school and/or not really science-types. It is fairly light on technology and terminology, while providing sound fundamentals on good brewing. As others have pointed out, the science in the book is not 100% accurate, but it is accurate enough for homebrewing and it seems the author intentionally simplified the science to save overly long explainations on obscure (read, boring) topics. I have some issues with the techniques used in the book, especially regarding boiling grains, but ask 50 award-winning brewers to define the perfect brewing technique and you'll get 50 different answers.

I do wish Janson had provided much more information on water chemistry and the effects of temperature at different stages of mashing, but I understand this book is meant as a springboard to further reading.

I appreciated Janson's chapter on off flavors. He provided easy to understand descriptions, possible sources, and ways to avoid them. While his solutions may seem obvious to advanced brewers, they are accurate the provide a fix to 90% of the problems encountered by novice brewers.

Everything in this book can be found on the Internet or through your local homebrew club, and there is no published "perfect" book on homebrewing. However, it is nice to have a reference book on the shelf and, for what it is, Beer Chem 101 is very good. In conjunction with Dave Miller's Homebrewing Guide or Charlie Papazian's The Complete Joy of Homebrewing, Janson's book provides an easy progression from extract brewing to all-grain brewing. I would have liked an advanced section on water, yeast, and mashing to ease the transition to Priciples of Brewing Science by George Fix, and I had a few issues with technique, so I have given it 4 stars.

A Friendly Guide with Straightforward Language

As I sat in my Beer Judge Certification Class learning about glucose, fructose and raffinose, and about chlorophenols, dimethyl sulfide and oxidation, a feeling of panic began to rise. What is this ion stuff? If only I had foreseen how important chemistry would become in my life, my attitude toward the scientific curriculum of my salad days would have been different.

Fortunately, one of my BJCP classmates, a water analyst for the EPA, recommended a book, "Brew Chem 101 - The Basics of Homebrewing Chemistry," written by Lee W. Janson, M.D., Ph.D. I liked the idea of the "101" - a clue that this was basic stuff. This is not an intimidating textbook from the halls of academia, but a friendly guide for those of us who need a foundation to support our new-found knowledge of brewing science. In straightforward language, Dr. Janson spoon-feeds the reader with useful information.

He describes the "real" differences between organic chemistry and inorganic chemistry. Janson elegantly discusses "charged atoms...collectively referred to as ions," the dissolving characteristics of water, hydrophobic molecules, and isomerization (described simply as a "change to a molecule with some partial charges that can, therefore, dissolve.") His idea of chemistry lessons allows the reader to impale herself on an idea in a matter of minutes, and climb the necessary steps to the temple of knowledge.

The Table of Contents presents brewing in a methodical relay, while each topic is covered simply, yet thoroughly enough for the non-chemist. Besides his acknowledgments, intro, recommended further reading, and glossary, Janson covers:

The Basic Chemistry of Brewing; The Biochemistry of Beer; Yeast and Fermentation; Mashing and Sparging; Understanding and Avoiding Off Flavors; Evaluating Beer

For the Beer Judge, the chapter on Off Flavors is invaluable in its simple presentation. Nothing significant is skipped; yet, the gentle immersion into the whys and hows of chemical reactivity are well laid out.

This is a good starter book for the novice, and serves as a stepping stone to more comprehensive books like Principles of Brewing Science by George J. Fix and Designing Great Beers: The Ultimate Guide to Brewing Classic Beer Styles by Ray Daniels.

About the Author

Christopher D. Moyes received his Ph.D. in Zoology from the University of British Columbia in the area of comparative muscle physiology. After postdoctoral fellowships in molecular physiology at the U.S. National Institutes of Health and Simon Fraser University, he took a position at Queen's University, where he is an associate professor in the Department of Biology. He teaches a spectrum of courses in cell biology and animal physiology, while continuing to pursue his research interests in molecular physiology and biochemistry.

Chris is a recipient of the Premier's Research Excellence Award. He is a member of the American Physiological Society and The Canadian Society of Zoologists and has served on the Natural Science and Engineering Research Council of Canada grant panel for Animal Biology. He is also a member of the Editorial Board of Comparative Biochemistry and Physiology. He has published more than 60 peer-reviewed papers, including contributions to four books. Among his recent papers are Moyes, C.D., and D.L. Hood (2003) "Origins and consequences of mitochondrial variation in vertebrate muscle," Annual Review of Physiology 65: 177-201 and Moyes, C.D. (2003) "Controlling muscle mitochondrial content," Journal of Experimental Biology 206: 4285-4391.

Patricia M. Schulte received her Ph.D. in Biological Sciences from Stanford University in the area of evolutionary physiology focusing on the role that changes in gene expression play in evolution. She is currently an assistant professor in the Department of Zoology at the University of British Columbia in Vancouver, where she teaches animal physiology and evolutionary physiology and runs an active research program. Using several species of fish as model systems, her research group is particularly focused on the relationship between genetic variation, performance differences, and fitness in a changing environment. She also conducts research into applied questions relating to fisheries, aquaculture, and aquatic toxicology.

Trish is a recipient of the Premier's Research Excellence Award and several teaching awards, including the UBC Science Undergraduate Society Award for Excellence in Teaching. Trish is a member of the Canadian Society of Zoologists and the Society for Integrative and Comparative Biology. She is an associate editor for the scientific journal Physiological and Biochemical Zoology.

She has published more than 30 peer-reviewed papers, including two book chapters. Among her recent papers are DeKoning, A. B. L., D.J. Picard, S.R. Bond, and P.M. Schulte (2004) "Stress and interpopulation variation in glycolytic enzyme expression in a teleost fish, Fundulus heteroclitus," and P.M. Well Written, Highly Approachable Physiology Textbook

I used this textbook for an intro level animal physiology class. Overall the book is very well written and approachable. Concepts are laid out simply and in an easy to follow format. If you are looking for a detailed look at underlying mechanisms than this book is not for you --but this isn't the focus of physiology as a discipline. Physiology is concerned with the larger relationship between biological structure and function. For instance, why cardiac cells are different from skeletal muscle. This Textbook Is Incredible!!!

I took a killer physiology class and didn't want to buy the latest edition of the textbook because it was way out of my price range. I ended up buying this one and I am so glad I did. This book is incredible for anyone taking a physiology class, especially one that requires it. I hate reading textbooks and much prefer learning from the professor but I found this book easy to read and very very informative. It has the information you need in a format that is interesting so you can actually finish a chapter without falling asleep. I highly recommend this textbook!!!

Well written; just a biology textbook in disguise.
You really have to force yourself to sit down and stare at the paragraphs, but it gets the message across eventually.
Very informative, plenty of pictures.

WWII fictional history at its best.....

Book 7 of Raiding Forces Desert Patrol does not fail to deliver on the story of Maj. Randal's war although three qtrs. of the book I spent figuring out who's who and who was doing what, bit of confusion. I was I little disappointed that the action was in the later part of the book. I'm still wondering what lies in store with in his next book Private Army, too bad we have to wait until December to find out what is going to happen with Captain The Lady Seaborn, John Randal and Raiding Forces Phil has done a lot of research on the situation of the war in North Africa which was completely accurate I've always been intrigued by that part of WWII if your not completely informed on this theater of operations you'll enjoy it either way but the way the author brings life into history, for me it was more enjoyable I had to buy the book instead of the Kindle version which I prefer.

The story was fun to read and informative. The series will appeal to a reader that has an interest in military history and tactics.

I bought this book, as I have all the others in the series, in digital (Kindle) format. It is poorly formatted and greatly in need of a good proofreader. Especially annoying and distracting are the running together of text where a transition to a new line should occur. This makes for choppy reading. Inconsistent use of quotes also makes for misunderstanding as to who is speaking. There are a multitude of characters in these stories so any help the reader gets in keeping them straight will be appreciated. Perhaps not every character from the past novels needs to appear in each subsequent book.

Bottom line–I will continue to buy and read these interesting and informative stories BUT the author needs to 1) Get a competent editor to cut the clutter and to proofread 2) Find someone who knows how to format and publish ebooks. 3) Realize that digital books are the moneymakers, not traditional paper books.

Bad Boy's Baby is hot. Jack is a playboy manwhore star quarterback. He has gotten himself into some really hot water. One too many overly exposed trysts with women of a loose nature. LOL. Leah is his PR rep. He got the crappy end of the stick by having to handle this difficult client, but she wants to advance her career so she is taking one for the team. Jack's career is on the verge of ending due to lack of judgment on his part. He can't understand why his private life and work life have to intermingle. He comes up with a harebrained scheme to make himself look good to the league president and his fans. The only problem is that Leah gets tossed under the bus in his deal. Now she has to deal with Jack both on and off the clock. Jack has always wanted Leah and has made his interest known. Leah has had a lusty liking to Jack, rather his hard body for some time, but didn't like his life choices or cocky attitude. She has been burned before, she doesn't need Jack in her life. The sexual tension between these two is so thick you can cut it with a butter knife. Will they overcome their individual issues and see if there is something real underneath their "fake" relationship?

I enjoyed reading this book

I enjoyed reading this book, although when it first started out Jack was way too much to take in. In my opinion Jack makes Terrell Owens look good and not by comparison. Leah is Jack's publicist who steadily tries unsuccessfully to keep him out of trouble. After another incident, Jack has a brilliant idea and pulls Leah in with him, by in forming the league President that they are dating. Leah is none to happy with the turn of events. Jack proceed to try and insinuate himself not only into Leah's life but her pants as well. Leah fights him every step of the way. Once these two hit the sheets and Leah become pregnant you would think that it is smooth sailing, NOT! Jack is still having problems, even while he is trying to change. He cannot catch a break, from the media, the league or Leah. When Jack gets hurt and the coach doesn't see about him, it made believe that the coach set it up to happen.

One thing that I did not like when Leah referred to Jack as being a god. The writer used an uppercase "G" rather than a lowercase "g."

My first from this author, but DEFINITELY not the last!

Whew, this book was SCORCHING HOT!! Jack, the star quarterback for the Rivets, just can't catch a break. Between hanging out with his team partying, drinking, and enjoying the company of multiple women, he just can't seem to stay out of trouble. Faced with a very good possibility that his contract won't be getting renewed, he told a tiny fib to the commissioner and said that he was in a relationship with his PR agent and now he needs to change his ways...

Leah has a plan.. her life is mapped out perfectly - at least it was until she found out that her fiancee got her best friend pregnant. And now, not only does she have to deal with her arrogant client, but now she has to keep up the charade that they are in a relationship. But then he makes her an offer she can't refuse...

The real question is - what happens when lines get blurred, and feelings get involved?

Understanding environmental psycology

The book by Robert Gifford Environmental Psychology: Principles and Practice introduces the concept of environmental psychology in an easy and readable manner. To me, it was the first text that revealed that such a topic existed, and made me understand its importance. Although both psychology and the environment, in particular the latter's aesthetic component is difficult to cast into numerical form, the text is no offending to engineers or the "numeric" people. Rather, it makes a seamless connection between psychology, the environment and aesthetics.
